I've got a lot of sewing experience but not a lot when it comes to armour or weapons. I really want to make an ARC Trooper but not to sure where to begin.

There are plenty of ARC's to choose from, ranging from Null Class to the ARC's we see in the Clone Wars. For a list of currently approvable Clones head over to the Costume Reference Library:

ARC's are up there as one of the more difficult Clones to build but I am sure that with solid research and hard work you can certainly put together a really badass costume.
I am actually restoring an old Null Class Captain at the moment so if you are interested you can check out my build thread, however with Photobucket being a pain I have yet to replace the images..
