How do decide which costume?

Costumes are split according to their allegiance, basically, those allied to the light side (rebels, republic troops, etc) fall into the Rebel Legion, and those allied to the Dark side (Sith, Stormtroopers, bounty hunters etc.) fall into the 501st.

Some characters are "dual approvable" meaning that their allegiance is undetermined (such as tusken raiders, jawas, wampas and the like) or they have clearly served both sides (Clonetroopers, thanks to the whole order 66 thing)

Thanks to everyone for all their suggestions. Just fantastic to see some of what has been done. I'm in the back of beyond called Emerald so Rocky is probably my closest set of like minded SW nuts. Looking at either a clone trooper or imperial pilot at this stage.

Go pilot Tie !!! ok so I'm biased on that point Eyebrows , but if you do want to find out some more information about becoming a Black Widow ( female Tie Pilot ) follow this link to the detachment http://www.jrsdetachment501st.org/ . Also in Rocky there is a member ( Nerf ) who has a Tie pilot costume, but there are also a few clones up there as well.

Quick question. How many versions of Mara Jade are approved? And which are they?

Mara Jade comes under the Sith Lord (SL) designation.

There's no easy way I can see to find out how many exactly are approved, although if you've got the time you can go through the 15 page member roster here and see how many you can spot:

There are 4 variations of Mara Jade
- MJ Bodysuit
- MJ Black Nebula
- MJ Arica
- MJ Arica Bodysuit

As Bullant said, she is in the SL designation but as her character is part of Flagship Eclipse detachment, her costumes are found in that section.
